GREEK TURKEY BURGERS

This healthy, but equally juicy, burger is one to remember. When you want to impress your friends and family, try this Greek turkey burger that is packed with flavor. (My adaptation of Greek Lamb Burgers from https://feedmephoebe.com)

INGREDIENTS:

  • 1 pound ground turkey (93% lean)

  • 1 garlic clove minced

  • 1 shallot minced

  • Zest from 1 lemon

  • 1/2 tsp cumin

  • 1 tsp salt

  • Brioche hamburger buns

  • Homemade pickled onions and cucumber

  • Half of an english cucumber

  • 1/4 cup mint leaves

  • 1 garlic clove

  • 1 TBS lemon juice

  • 1 cup Greek yogurt (I use Fage Total 0%)

  • 1/2 tsp salt

  • Quick pickled onions

  • Sliced cucumber

  • Feta cheese

  • Sliced heirloom tomato

INSTRUCTIONS:

  1. Combine ground turkey, minced garlic, minced shallots, lemon zest, cumin, 1 tsp salt and form into 4 hamburger patties.

  2. In a food processor combine half english cucumber, mint leaves, garlic clove, lemon juice, Greek yogurt, and 1/2 tsp salt. Pulse until combined with small chunks of cucumber.

  3. Grill turkey patties and brioche buns.

  4. Assemble burgers on grilled brioche buns with mint tzatziki, feta cheese, sliced heirloom tomato, sliced cucumber, quick pickled onions, and turkey burger. Such a delicious summer burger!
