ASIAN GLASS NOODLES WITH ALL THE VEGGIES
My biggest food weakness is Thai drunken noodles. I crave them almost all the time. This is my version of “healthier” drunken noodles. I use sweet potato glass noodles. They are delicious and have a very appealing texture. No one would consider these drunken noodles, but they have many of the same flavors and they sure do satisfy my craving.
INGREDIENTS:
7oz Sweet Potato Glass Noodles (I use these)
1 pound Shrimp, Chicken, or Steak. Whatever protein you prefer. I usually use shrimp or chicken. Cut chicken/steak into bite size pieces. Remove shells, devein, and clean shrimp.
3 Garlic Cloves, minced
2 TBS Soy Sauce
2 TBS Hoisin Sauce
1 TBS Rice Wine Vinegar
1 TBS Fish Sauce
1 TBS Sambal (Chili Garlic Sauce. Sriracha works too)
1/2 tsp Grated Ginger
Handful Fresh Basil, sliced into ribbons
Half a large White Onion, thinly sliced
Half a Red Bell Pepper, thinly sliced
2 Stalks Green Onion, sliced into ribbons
15oz can Baby Corn, cut into bite size pieces
8oz can Bamboo Shoots
Whatever additional veggies you want. I like to load it up with whatever I have in the fridge. Usually carrots, peas, zucchini, sometimes cauliflower.
Oil of your choice. I use grape seed oil.
INSTRUCTIONS:
Combine minced garlic, soy sauce, rice wine vinegar, fish sauce, sambal, and grated ginger. Pour half over top of your choice of protein. Cover and refrigerate for at least 20 minutes. (I do this step prior to cutting any of my veggies. It gives the protein time to marinate.) Set aside remaining sauce for later.
In a wok or large sauté pan heat 1 TBS oil. Add onion and garlic and sauté until fragrant. Add bell pepper (and carrots, if using). Cook for 2 minutes. Add baby corn and bamboo shoots and cook for another minute.
Push veggies to outer ring of the wok, creating an open area in the center of the wok. Add the protein with all the sauce used as the marinade. Let the protein cook entirely, periodically pushing around with a wooden spoon.
While the protein cooks, boil water and cook the noodles per the package instructions.
Once the protein is cooked through, add the noodles and remaining sauce that was set aside. Mix all components together well. If it feels dry just add a little water or chicken broth for moisture.
Add basil and green onion. Give the mixture one more toss, then eat!
